Job Description

We are seeking a skilled and passionate Commercial Baker / Pastry Chef to join our dynamic bakery team in Nanaimo, BC. This is an exciting opportunity for an experienced professional to contribute to our reputation for excellence in baked goods and desserts. The ideal candidate will have a strong background in commercial baking environments, a keen eye for detail, and a commitment to producing high-quality products. Key Responsibilities

  • Prepare a wide variety of baked goods, including breads, pastries, cakes, cookies, and desserts, following established recipes and quality standards.
  • Operate and maintain commercial bakery equipment safely and efficiently.
  • Manage inventory of ingredients, place orders, and minimize waste.
  • Ensure all products meet Thrifty Foods' strict quality, presentation, and taste guidelines.
  • Adhere to all food safety and sanitation regulations (HACCP, provincial health standards).
  • Collaborate with the bakery team to ensure efficient production schedules and customer satisfaction.
  • Develop new recipes and innovative products to enhance our bakery offerings.
  • Maintain a clean and organized workstation and bakery area.

Required Skills

  • Minimum of 3 years of proven experience as a Commercial Baker or Pastry Chef in a high-volume setting.
  • Demonstrated expertise in bread making, pastry production, and cake decoration.
  • Solid understanding of food safety principles and practices (e.g., HACCP).
  • Ability to work early mornings, evenings, weekends, and holidays as required.
  • Physical stamina to stand for long periods, lift heavy ingredients (up to 25kg), and work in a fast-paced environment.
  • Strong attention to detail, creativity, and organizational skills.
  • Fluency in English (written and spoken).

Preferred Qualifications

  • Red Seal certification or equivalent culinary diploma/degree.
  • Experience with large-scale commercial bakery equipment and production.
  • Previous experience working in a Canadian commercial kitchen environment.
  • Knowledge of various international baking techniques and pastry trends.
