Job Description
We are seeking a talented and passionate Chef de Partie to join our dynamic culinary team at Ellenborough Park. This is an exciting opportunity for an ambitious chef with a strong background in fine dining to contribute to our critically acclaimed kitchen. You will be responsible for a specific section of the kitchen, ensuring the highest standards of food preparation, presentation, and hygiene. Key Responsibilities
- Manage and oversee a specific kitchen section (e.g., Larder, Hot, Pastry) during service.
- Prepare and cook food items according to chef's recipes and standards of quality and portion control.
- Ensure all dishes are prepared and presented to the highest fine dining standards.
- Monitor food stock levels and make appropriate requisitions for fresh supplies.
- Maintain a clean, organized, and hygienic workstation at all times.
- Supervise and train junior kitchen staff (Commis Chefs, Apprentices) within your section.
- Adhere to all health and safety regulations and company policies.
- Collaborate with the Head Chef and Sous Chef on menu development and specials.
- Manage food waste effectively and contribute to cost control initiatives.
Required Skills
- Minimum of 2 years of experience as a Commis Chef or 1 year as a Chef de Partie in a fine dining establishment or 4-5 star hotel.
- Proven ability to work effectively in a high-pressure kitchen environment.
- Strong knowledge of food preparation techniques, cooking methods, and kitchen equipment.
- Excellent understanding of food safety and hygiene standards.
- Ability to work cohesively as part of a team.
- Demonstrated passion for culinary arts and commitment to quality.
- Good communication skills and ability to take direction.
Preferred Qualifications
- NVQ Level 2 or 3 in Professional Cookery or equivalent qualification.
- Experience with various cooking techniques and international cuisines.
- Familiarity with sourcing local and seasonal produce.
- Basic understanding of inventory management and cost control.
