Job Description
We are seeking a highly skilled and passionate Chef de Partie to join the esteemed culinary team at The Mumbles Bay Grande Hotel. This is an exciting opportunity for a dedicated and ambitious chef to contribute to a renowned fine dining experience. As a Chef de Partie, you will be instrumental in delivering exquisite dishes to our discerning guests, maintaining the highest standards of food quality, presentation, and hygiene. Key Responsibilities
- Manage and oversee a specific section of the kitchen (e.g., Larder, Sauce, Fish, Pastry) during service.
- Prepare, cook, and present dishes to the highest standards, following recipes and specifications.
- Ensure consistent food quality and presentation, adhering to the restaurant's fine dining reputation.
- Monitor stock levels and order supplies for your section, minimizing waste and ensuring freshness.
- Train and mentor junior kitchen staff and commis chefs, fostering a positive learning environment.
- Maintain immaculate hygiene standards and ensure compliance with all health and safety regulations.
- Collaborate with the Head Chef and Sous Chef on menu development and special events.
- Handle pressure gracefully during busy service periods while maintaining composure and efficiency.
- Contribute to a positive and professional kitchen atmosphere.
Required Skills
- Proven experience as a Chef de Partie in a fine dining restaurant or 4/5-star hotel environment.
- Strong knowledge of various cooking methods, ingredients, equipment, and procedures.
- Excellent culinary skills with a keen eye for detail and presentation.
- Ability to work effectively in a fast-paced and demanding kitchen.
- Understanding of food safety and hygiene regulations (e.g., HACCP).
- Strong communication and teamwork skills.
- Passion for food and a desire to continuously learn and improve.
- Fluency in English (written and spoken).
Preferred Qualifications
- Culinary degree or relevant professional certification.
- Experience with seasonal and locally sourced ingredients.
- Previous experience working in an internationally diverse kitchen team.
- Basic knowledge of Welsh culinary traditions (beneficial but not essential).
