Job Description

As Executive Chef, you will be the driving force behind our entire culinary operation, from menu conceptualization and development across our diverse outlets to overseeing kitchen management, food preparation, and staff training. Key Responsibilities
- Lead and manage all aspects of the kitchen operation, including menu planning, food preparation, and inventory management across all hotel outlets.
- Develop innovative and diverse culinary offerings for fine dining, banqueting, catering, and room service, reflecting seasonal availability and guest preferences.
- Ensure the highest standards of food quality, presentation, consistency, and hygiene are met and exceeded at all times.
- Recruit, train, mentor, and motivate a large, diverse team of culinary professionals, fostering a culture of continuous learning and excellence.
- Manage kitchen budgets, control food costs, and optimize profitability without compromising the integrity or quality of ingredients and dishes.
- Implement and maintain rigorous health, safety, and sanitation standards in accordance with local regulations (e.g., HACCP) and Fairmont policies.
- Foster a positive, collaborative, and respectful working environment, promoting teamwork and professional growth.
- Stay abreast of industry trends, culinary techniques, and guest preferences to continually evolve and innovate our dining experiences.
- Collaborate with other hotel departments, including F&B, Events, and Sales, to ensure seamless service delivery and exceptional guest satisfaction.
- Oversee all special events, catering, and banqueting operations, ensuring meticulous planning and flawless execution.
Required Skills
- Minimum of 5 years of progressive culinary leadership experience, with at least 3 years as an Executive Chef or Head Chef in a reputable establishment.
- Demonstrated ability to manage, inspire, and develop a large, diverse culinary team.
- Exceptional creativity and a profound passion for developing innovative and high-quality dishes.
- Extensive knowledge of international cuisines, advanced culinary techniques, and food presentation.
- Profound understanding of food safety, hygiene, and sanitation regulations (HACCP certification preferred).
- Proven financial acumen, including strong experience with budgeting, cost control, inventory management, and vendor negotiations.
- Excellent communication, organizational, and interpersonal skills, with the ability to interact effectively at all levels.
- Adaptability and resilience in a fast-paced, high-pressure, and demanding luxury hotel environment.
- Ability to work flexible hours, including evenings, weekends, and holidays, as dictated by business needs.
Preferred Qualifications
- Culinary degree or equivalent professional certification from a recognized culinary institution.
- Experience working in a luxury hotel brand, a Michelin-starred restaurant, or a 5-star dining environment.
- Fluency in French or other languages is considered a significant asset.
- Demonstrated experience with sustainable sourcing, farm-to-table initiatives, and local producer relationships.
- Familiarity with the Canadian culinary landscape, local suppliers, and unique regional ingredients.
