Job Description
We are seeking a highly motivated and skilled Chef de Partie to join our prestigious fine dining culinary team. This is an exciting opportunity for a passionate culinary professional to contribute to our award-winning kitchens and develop their skills in an international luxury resort environment. The successful candidate will be responsible for a specific section of the kitchen, ensuring the highest standards of food preparation, quality, and presentation are met. Key Responsibilities
- Manage and oversee a specific kitchen section (e.g., saucier, entremetier, garde manger) during service.
- Prepare and cook high-quality dishes according to Fairmont Chateau Whistler's standards and recipes.
- Ensure all food preparation and presentation meets established culinary standards and guest expectations.
- Monitor food quality, portion control, and waste management.
- Maintain a clean, organized, and safe working environment in line with health and safety regulations.
- Assist in training and mentoring junior kitchen staff and apprentices.
- Collaborate effectively with other chefs and kitchen staff to ensure smooth service flow.
- Participate in menu development and special event planning as required.
- Adhere to all food hygiene and sanitation procedures.
Required Skills
- Minimum 2 years of experience as a Chef de Partie or equivalent role in a fine dining establishment.
- Proven ability to manage a kitchen section efficiently and effectively.
- Strong knowledge of various cooking techniques and culinary principles.
- Excellent understanding of food safety and sanitation regulations.
- Ability to work under pressure in a fast-paced, high-volume environment.
- Strong communication and interpersonal skills.
- Creativity and passion for culinary arts.
- Fluency in English.
Preferred Qualifications
- Culinary diploma or equivalent certification from a recognized institution.
- Experience working in a luxury hotel or resort setting.
- Knowledge of Canadian food safety regulations (e.g., FoodSafe).
- Previous experience working with diverse international teams.
