Job Description

Fairmont Hotels & Resorts is seeking an exceptionally talented Pastry Chef / Chocolatier to join our exquisite culinary team in Canmore, Alberta. This is a unique opportunity for a passionate and skilled artisan to create breathtaking desserts, fine pastries, and intricate chocolate creations for our discerning guests. Key Responsibilities

  • Design, prepare, and present a diverse range of high-quality pastries, desserts, and baked goods.
  • Create intricate chocolate showpieces, confections, and amenities.
  • Develop new and innovative dessert menu items, considering seasonality and guest preferences.
  • Oversee inventory, ordering, and stock rotation of pastry ingredients and supplies.
  • Maintain the highest standards of food hygiene, safety, and sanitation in the pastry kitchen.
  • Collaborate with the culinary team to ensure seamless service and consistent product quality.
  • Train and mentor junior pastry staff, fostering a positive and productive work environment.
  • Adhere to budget guidelines and control food costs without compromising quality.

Required Skills

  • Proven experience as a Pastry Chef or Chocolatier in a high-volume, luxury, or fine-dining establishment.
  • Exceptional proficiency in all aspects of pastry production, including baking, decorating, and plating.
  • Expertise in chocolate tempering, molding, and confectionery techniques.
  • Strong creative flair and an eye for detail in presentation.
  • Ability to work independently and and as part of a dynamic team.
  • Excellent organizational and time management skills.
  • Knowledge of food safety and sanitation regulations.
  • Ability to work flexible hours, including weekends and holidays.

Preferred Qualifications

  • Culinary degree or relevant certification from an accredited institution.
  • Previous experience in a 4- or 5-star hotel environment.
  • Demonstrated ability to develop and cost new menu items.
  • Fluency in multiple languages.
