Job Description
We are seeking a highly skilled and passionate Sushi Chef / Specialist Cook to join our esteemed culinary team in Stoke-on-Trent. This is a unique opportunity for an experienced professional to showcase their expertise in authentic Japanese sushi preparation and contribute to our reputation for excellence. The successful candidate will be a master of their craft, capable of creating traditional sushi, sashimi, and innovative rolls, as well as managing a section of the kitchen with precision and creativity. Key Responsibilities
- Prepare a wide variety of sushi, sashimi, nigiri, and maki rolls with exceptional precision and artistic presentation.
- Manage and maintain a pristine sushi bar and workstation, adhering to the highest standards of hygiene and food safety.
- Order and maintain inventory of fresh fish and ingredients, ensuring quality and minimizing waste.
- Collaborate with the head chef and kitchen team to develop new menu items and seasonal specials.
- Train and mentor junior kitchen staff, sharing knowledge of Japanese culinary techniques and traditions.
- Monitor food preparation methods, portion sizes, and garnishing to ensure consistent quality and presentation.
- Adhere to all company policies and procedures, including health and safety regulations.
- Contribute to a positive and collaborative kitchen environment.
Required Skills
- Proven experience as a Sushi Chef or Specialist Cook in a reputable Japanese restaurant.
- In-depth knowledge of various fish types, their preparation, and storage.
- Exceptional knife skills and precision in cutting techniques.
- Strong understanding of traditional Japanese culinary methods and presentation.
- Ability to work efficiently under pressure in a fast-paced environment.
- Excellent attention to detail and commitment to quality.
- Food hygiene certification (Level 2 or equivalent).
- Strong communication and teamwork skills.
Preferred Qualifications
- Formal culinary training or certification in Japanese cuisine.
- Experience with Omakase style dining preparation.
- Fluency in Japanese (not mandatory, but a plus).
- Demonstrable creativity in developing new sushi and fusion dishes.
