Job Description
We are seeking a highly skilled and passionate Sushi Chef / Specialist Cook to join our dynamic team in Saint John, New Brunswick. This is an exciting opportunity for an experienced culinary professional to showcase their expertise in sushi preparation and contribute to our high standards of food quality and customer satisfaction. Key Responsibilities
- Prepare a wide variety of sushi, sashimi, maki, and other Japanese delicacies with precision and artistry.
- Manage the sushi counter, ensuring cleanliness, organization, and adherence to food safety standards.
- Monitor and maintain inventory levels of sushi ingredients, placing orders as needed.
- Ensure the freshness and quality of all ingredients used in sushi preparation.
- Develop and introduce new sushi creations and menu items to delight customers.
- Train and mentor junior kitchen staff on sushi preparation techniques and best practices.
- Adhere strictly to all health and safety regulations, including HACCP guidelines.
- Provide exceptional customer service, occasionally interacting with customers at the sushi bar.
- Collaborate with other kitchen staff to ensure smooth operation of the fresh food department.
Required Skills
- Proven experience as a Sushi Chef or Specialist Cook.
- Extensive knowledge of traditional and contemporary sushi preparation techniques.
- Strong understanding of Japanese cuisine and culture.
- Ability to work efficiently in a fast-paced environment.
- Excellent knife skills and attention to detail.
- Knowledge of food safety and hygiene regulations.
- Strong communication and teamwork abilities.
- Ability to work flexible hours, including weekends and holidays.
Preferred Qualifications
- Formal culinary training or certification in Japanese cuisine.
- Experience working in a high-volume grocery or restaurant setting.
- Knowledge of various fish cutting techniques (e.g., filleting, boning).
- Fluency in English; additional language skills are an asset.
- Experience with inventory management and cost control in a culinary context.
