Job Description

We are seeking a highly skilled and passionate Chef de Partie to join our prestigious fine dining kitchen at JW Marriott Tucson Starr Pass Resort & Spa. This pivotal role involves overseeing a specific section of the kitchen, ensuring the highest standards of food preparation, presentation, and quality are consistently met. The ideal candidate will possess a strong foundation in classical and contemporary cooking techniques, a keen eye for detail, and the ability to thrive in a fast-paced, high-pressure environment. Key Responsibilities

  • Manage and oversee a designated kitchen section (e.g., Saucier, Garde Manger, Entremetier), ensuring smooth operation and adherence to recipes and standards.
  • Prepare and cook dishes according to established recipes, quality standards, and portion controls.
  • Train and mentor junior kitchen staff, fostering a positive and productive work environment.
  • Monitor inventory, place orders, and minimize waste to control food costs.
  • Ensure compliance with all food safety, hygiene, and sanitation regulations.
  • Collaborate with the Head Chef and Sous Chefs to develop new menu items and specials.
  • Maintain a clean, organized, and safe work station at all times.
  • Contribute to a culture of culinary excellence and innovation.

Required Skills

  • Proven experience as a Chef de Partie or equivalent role in a high-volume, fine dining establishment.
  • Strong knowledge of various cooking methods, ingredients, equipment, and procedures.
  • Exceptional knife skills and culinary technique.
  • Ability to work effectively under pressure and manage multiple tasks simultaneously.
  • Excellent communication and leadership skills.
  • Understanding of food safety and sanitation standards (HACCP).
  • Flexibility to work evenings, weekends, and holidays.

Preferred Qualifications

  • Culinary degree or relevant professional certification.
  • Experience with international cuisines and diverse cooking styles.
  • Familiarity with inventory management software.
  • Previous experience in a luxury hotel or resort setting.
